Kentish fishing town Folkestone is becoming quite the destination du jour, as city slickers escape to the coast on the 50-minute high speed train from St Pancras. With enviable views out across the water and the Harbour Arm, a terrace bar for summer sundowners, and a forward-thinking menu focused on fresh seafood, a visit to Rocksalt is quite a treat (though not a cheap one).
